3/8 cup salt
11/8 cup sugar
1 tsp pepper
1/4 tsp granulated garlic
1/4 tsp granulated onion
1/2 tsp Prague powder #1
1 cup honey

4 1-inch tuna steaks

Mix the above ingredients until all dissolved, in about 1 gallon
of water.

Place the tuna steaks into it, making sure they are well covered.
Let soak overnight in the refrigerator. Set the smoker, BBQ Cooker, etc. to 250 degrees
After letting the tuna dry on the racks for about an hour, place them in the cooker at 250 degrees for one hour, then close the dampers and add some more water soaked wood chunks to get the smoke really going and smoke at 140 degrees for 7 hours.
After this experience you may just give up law entirely and become a BBQ/Fisherman combo junkie!
